Jilly is ecstatic in the kitchen today. Why, you ask? FINALLY — she’s found a dinner roll recipe that turned out marvellously:)
Here, then, is a simple recipe for the most luscious quick and easy Dinner Rolls. You’ll never buy store bought again.
4 c. flour
1/3 c. sugar
1 tsp. salt
1 Tbsp. quick action yeast
1 ½ c. hot tap water
1 egg
1/3 c. softened butter
Sift together 2 c. flour with the sugar and then add the yeast. With mixer at low speed, blend in butter then add the egg and hot water. Add in the remaining 2 c. flour to make a soft dough. Change to a dough hook and allow to knead for ~ 10 ”. Dough should be slightly sticky but silky at this stage.
Allow to rest for 10”. Cover with a tea towel, say a little prayer and thank the baking gods for this delight. Make yourself a cup of tea, relax and wait for the magic to happen. Good buns need time to rest then go to work.
Scoop out the dough from the mixing bowl. Knead gently on a lightly floured surface and shape into two elongated rolls. Divide each into 6 pieces, and roll each one into a ball using a little flour if need be. Place in a sprayed 11” X 14” pan.
Cover with your magical tea towel again. Allow to rise for 30” or so until doubled in size then bake at 375° for 20” until lightly browned.
Rolls may be embellished with a brush of butter and dried rosemary or whatever herbs or condiments you’d like to try. Here, you can see Jilly tried a little of each – butter, butter and rosemary, and butter, rosemary and garlic. Then, right out of the oven one simply disappeared, they smelled so good. Yum!
Serve warm or freeze to reheat and serve later. Makes 12 large dinner rolls.
